4 cups fresh sweet corn kernels (or frozen if fresh is unavailable)

1 large onion, finely diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced into small cubes

1 red bell pepper, finely diced

1 carrot, diced into thin rounds

4 cups vegetable broth

1 cup whole milk (or almond milk for a dairy-free option)

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly cracked pepper, to taste

2 green onions, chopped (for garnish)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Sauté the Aromatics:

    - In a large pot, warm the olive oil over medium heat. Once hot, add the finely diced onion. Sauté for about 5 minutes, or until the onion is translucent and fragrant. Stir in the minced garlic and cook for another minute, ensuring it does not burn.

      Add Vegetables:

        - Incorporate the diced red bell pepper, carrot, and potatoes into the pot. Stir and cook for approximately 4-5 minutes until the vegetables begin to soften, stirring occasionally for even cooking.

          Combine with Broth:

            - Add the fresh or frozen corn kernels, vegetable broth, dried thyme, and smoked paprika to the pot. Increase the heat to bring the mixture to a rolling boil. Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

              Blend for Creaminess:

                - Using an immersion blender, puree about half of the chowder directly in the pot to achieve a creamy texture while retaining some chunky pieces for heartiness. If you're using a traditional blender, carefully allow the chowder to cool slightly, then blend in batches, returning the puree to the pot afterward.

                  Finish with Milk:

                    - Stir in the whole milk (or almond milk) and place the pot back over medium heat. Allow the chowder to simmer for an additional 5 minutes while seasoning it with salt and freshly cracked pepper to taste.
