Ingredients

1 ½ cups rolled oats

1 cup pecans, chopped

½ cup almond flour

½ cup pure maple syrup

⅓ cup coconut oil, melted

1 teaspoon pure vanilla extract

½ teaspoon sea salt

½ teaspoon ground cinnamon

¼ cup dried cranberries or raisins (optional for added sweetness)

2 tablespoons flaxseed meal (optional, for enhanced nutrition)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, making sure there’s some overhang to facilitate easy removal of the bars later.

Combine Dry Ingredients: In a medium mixing bowl, combine the rolled oats, chopped pecans, almond flour, sea salt, ground cinnamon, and flaxseed meal (if you choose to use it). Stir them together until the mixture is uniformly combined, ensuring that the oats and nuts are evenly distributed.

Mix Wet Ingredients: In another bowl, whisk together the melted coconut oil, pure maple syrup, and pure vanilla extract until thoroughly blended, creating a smooth and cohesive mixture.

Combine Mixtures: Gradually pour the wet ingredients into the bowl containing the dry mix. Stir until every oat and nut is well coated with the wet mixture. If you opted for dried cranberries or raisins, gently fold them in at this point for a delightful touch of sweetness.

Transfer to Baking Pan: Spoon the oat mixture into the prepared baking pan and spread it out evenly. Use the back of a spatula or your hands to firmly press the mixture down to create a compact, even layer.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes. Keep an eye on it; you want the edges to turn a lovely golden brown. The center may seem a bit soft, but it will firm up nicely as it cools.

Cool and Slice: After baking, remove the pan from the oven and allow it to cool for about 10 minutes. Using the parchment paper, lift the entire batch out of the pan and set it on a wire rack to cool completely, which will make slicing easier. Once cool, cut into squares or bars as desired.

Store: Keep your sweet bars in an airtight container at room temperature for up to one week for maximum freshness. Alternatively, refrigerate them to extend their shelf life.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 12 bars

Presentation Tips: Serve these bars on a rustic wooden board or a colorful plate, and consider drizzling a bit more maple syrup on top for an added touch of indulgence. For a special occasion, sprinkle with extra chopped pecans or a dusting of cinnamon. Enjoy!
