1 medium butternut squash, peeled, seeds removed, and cut into thin strips

1 large red bell pepper, sliced

1 large yellow bell pepper, sliced

1 medium red onion, sliced

3 tablespoons olive oil

2 tablespoons brown sugar

1 tablespoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust based on your spice preference)

Salt and black pepper to taste

8 small flour or corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: slices of avocado, crumbled feta or cotija cheese, and sour cream

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C) and allow it to preheat while you prepare the vegetables.

    Prepare the Vegetables: In a large mixing bowl, combine the butternut squash strips, sliced red bell pepper, sliced yellow bell pepper, and sliced red onion.

      Make the Seasoning Mix: In a small bowl, whisk together the olive oil, brown sugar, chili powder, ground cumin, smoked paprika, cayenne pepper, and a generous pinch of salt and black pepper until well combined. Pour this seasoning mixture over the vegetable medley in the large bowl.

        Toss and Coat: Use your hands or a spatula to thoroughly toss the vegetables until they are evenly coated with the seasoning mixture.

          Roast the Vegetables: Transfer the seasoned vegetables to a large baking sheet, spreading them out into a single layer for even roasting.
