1 cup brown rice or quinoa, cooked according to package directions

1 can (15 oz) black beans, rinsed thoroughly and drained

1 cup corn (fresh, frozen, or canned, thawed if frozen)

1 cup cherry tomatoes, diced

1 ripe avocado, diced

½ cup red onion, finely diced

Juice of 1 lime

½ cup fresh cilantro, chopped

1 cup shredded cheddar cheese

Salsa and sour cream, for topping (optional)
