1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, finely chopped

1/4 cup feta cheese, crumbled (optional)

4 whole wheat tortillas or wraps

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 ripe avocado, sliced (for serving)

Prepare the Filling: In a medium mixing bowl, crack in the eggs and whisk them well. Season the eggs with a pinch of salt and freshly ground black pepper. Gently fold in the chopped fresh basil and the crumbled feta cheese if you choose to use it. Set this mixture aside for later.

    Sauté the Tomatoes: In a non-stick skillet, heat the olive oil over medium heat until shimmering. Add the halved cherry tomatoes and sauté for approximately 2-3 minutes, or until they soften and begin to burst.
