1 large cucumber, peeled and diced

1 small red onion, finely chopped

1 cup feta cheese, crumbled into small chunks

1/4 cup fresh parsley, finely chopped

3 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

    In a spacious mixing bowl, combine the diced tomatoes, cucumber, red onion, crumbled feta cheese, chopped parsley, and chopped mint. If you are using avocado, gently fold it into the mixture at this time, taking care not to mash it.
