Ingredients

1.5 lbs beef sirloin, cut into 1-inch cubes

2 cups watermelon, pureed (use seedless for smooth texture)

1/4 cup soy sauce

3 tablespoons honey

2 tablespoons rice vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons cold water

Salt and pepper to taste

2 tablespoons chopped green onions (for garnish)

2 tablespoons sesame seeds (for garnish)

Instructions

Marinate the Beef: In a large mixing bowl, combine the beef cubes with soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Stir until the beef is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight to enhance the flavor.

Prepare the Watermelon Glaze: In a medium saucepan, add the pureed watermelon, sesame oil, and a pinch of salt. Heat over medium temperature, bringing the mixture to a gentle simmer. Allow it to cook for about 5 minutes, stirring occasionally to prevent sticking.

Thicken the Glaze: Gradually incorporate the cornstarch and cold water mixture into the watermelon sauce while continuously stirring. Continue to simmer for an additional 2-3 minutes until the glaze thickens to a syrup-like consistency. Once thickened, remove from heat and set aside.

Cook the Beef: Preheat a grill pan or heavy skillet over high heat. Remove the marinated beef from the refrigerator, allowing any excess marinade to drip off. Sear the beef cubes in the hot pan for about 2-3 minutes on each side, cooking until they reach your desired level of doneness (medium-rare is recommended for tenderness).

Glaze the Beef: Once the beef is cooked, pour the prepared watermelon glaze over the seared beef in the pan. Gently toss to ensure all the beef is evenly coated in the glaze. Cook for an additional 2 minutes to allow the glaze to heat through and adhere to the beef.

Serve: Transfer the glazed beef to a serving platter. For a fresh and vibrant presentation, garnish with chopped green onions and a sprinkle of sesame seeds.

Enjoy: Serve alongside grilled vegetables or fluffy jasmine rice, allowing you to savor every delightful drop of the delicious watermelon glaze!
