For the Galette Dough:

1 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ teaspoon salt

½ cup (1 stick) unsalted butter, cold and cut into cubes

5-6 tablespoons ice water (more or less as needed)

For the Mango Filling:

3 ripe mangoes, peeled and sliced thinly

2 tablespoons brown sugar

1 tablespoon cornstarch

1 tablespoon fresh lime juice

Zest of 1 lime

½ teaspoon ground cinnamon

A pinch of salt

For Assembly:

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Extra granulated sugar for sprinkling

Prepare the Dough:

          - Form the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for a minimum of 1 hour to allow the butter to firm up.

            Make the Mango Filling:

              - In a medium-sized bowl, combine the thinly sliced mangoes with brown sugar, cornstarch, lime juice, lime zest, ground cinnamon, and a pinch of salt. Toss gently to coat the mango slices evenly. Set aside to infuse the flavors while the dough chills.
