Ingredients

2 medium zucchini, grated

1 cup cream cheese, softened at room temperature

1 cup freshly shredded cheddar cheese

1/2 cup freshly grated Parmesan cheese

1/4 cup fresh chives, finely chopped

1 clove garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and freshly ground black pepper, to taste

1 cup crushed nuts (such as walnuts or pecans) for coating

Fresh herbs (like parsley or basil) for garnish

Instructions

Prepare the Zucchini: Begin by grating the zucchinis using a box grater or food processor. Transfer the grated zucchini to a clean kitchen towel or cheesecloth. Gather the corners of the towel and twist to wring out as much moisture as possible. This step is essential to avoid a watery cheese mixture.

Mix the Cheese: In a large mixing bowl, combine the drained grated zucchini, softened cream cheese, shredded cheddar, and grated Parmesan. Use a spatula or wooden spoon to mix thoroughly until the cheeses and zucchini are well incorporated.

Season It Up: Add in the finely chopped chives, minced garlic, onion powder, and paprika to the cheese mixture. Stir well to ensure the seasonings are evenly distributed. Taste the mixture and add salt and freshly ground black pepper according to your preference.

Form the Cheese Balls: With your hands, scoop out a generous portion of the mixture and roll it into balls approximately the size of a baseball. Repeat this process until all the mixture has been shaped into cheese balls, forming about 6-8 depending on size.

Coat with Nuts: Pour the crushed nuts into a shallow dish. Gently roll each cheese ball in the nuts, pressing lightly to ensure an even coat is achieved all around for an extra crunchy texture.

Chill: Arrange the nut-coated cheese balls on a serving platter, then cover with plastic wrap or foil. Refrigerate the cheese balls for at least 1-2 hours. This chilling step helps the flavors meld together and allows the cheese to firm up for easier serving.

Garnish and Serve: Just before serving, sprinkle freshly chopped herbs (such as parsley or basil) over the cheese balls for a bright and appetizing finish. These delightful bites pair wonderfully with an assortment of crackers, crunchy vegetable sticks, or warm fresh bread.

                Prep Time: 20 minutes | Total Time: 2 hours 20 minutes | Servings: 6-8

Presentation Tips: For an elegant touch, serve the cheese balls on a beautifully arranged platter, garnished with slices of cucumbers or cherry tomatoes. Adding a small bowl of dipping sauce, such as a zesty salsa or a light vinaigrette, can enhance the experience. Enjoy!
