Ingredients

4 medium zucchinis, sliced into 1/4-inch rounds

2 cups fresh mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup ricotta cheese

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional, for a kick)

1/2 cup breadcrumbs (for topping)

Extra basil and parsley for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

Prepare the Zucchini: In a large mixing bowl, add the sliced zucchini and drizzle with olive oil. Include the minced garlic, dried oregano, dried thyme, salt, pepper, and red pepper flakes (if you want some heat). Toss the zucchini thoroughly so that all slices are well coated in the seasonings.

      Layer the Ingredients:

        - Grease a 9x13-inch baking dish. Spread half of the seasoned zucchini rounds evenly across the bottom.

          - Spoon dollops of half the ricotta cheese over the zucchini layer. Then, sprinkle half of the shredded mozzarella and grated Parmesan cheese on top.

            - Follow with half of the chopped fresh basil and parsley.

              - Repeat this layering process with the remaining zucchini, ricotta, mozzarella, and Parmesan cheese. Reserve some of the herbs for garnishing the finished dish.

Add Breadcrumb Topping: In a small bowl, combine the breadcrumbs with a drizzle of olive oil, and season with a pinch of salt and pepper. Stir well, then generously sprinkle this mixture over the final layer of cheese to create a crispy topping.

Bake: Cover the dish with aluminum foil to retain moisture during baking. Place it in the preheated oven and bake for 30 minutes. Remove the foil and continue to bake for an additional 15-20 minutes, or until the top is beautifully golden and bubbly.

Cool and Garnish: After baking, take the dish out of the oven and let it cool for about 5-10 minutes. This resting period allows flavors to settle. Garnish the top with the reserved fresh basil and parsley for a pop of color and freshness.

Serve: Cut the bake into square servings and present warm. Enjoy the comforting and cheesy bliss of your Herb-Infused Zucchini Bake!

Presentation Tips: Serve in the baking dish for a rustic presentation, or transfer to a wooden cutting board for a more elegant display. Adding a light drizzle of balsamic glaze over the top just before serving can elevate the dish further!
