Prepare the Zucchini Noodles: Using a spiralizer, transform the zucchinis into noodles and place them in a colander. Lightly sprinkle with salt and let them rest to draw out excess moisture, which helps keep the dish from being watery.

    Sauté Aromatics: In a large non-stick skillet or wok, heat the olive oil over medium-high heat. Once hot, add the minced garlic and grated ginger. Sauté for about 30 seconds or until aromatic, making sure not to burn them.

      Stir Fry the Vegetables: Add the sliced bell peppers, snap peas, and julienned carrots to the skillet. Stir fry for about 3-4 minutes until the vegetables are vibrant and slightly tender yet still have a nice crunch.
