Ingredients

2 medium zucchinis, cut into 1/4-inch thick rounds

1 cup freshly grated Parmesan cheese

1 cup breadcrumbs (use whole wheat or panko for an extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

Cooking spray or a light drizzle of olive oil

Optional: Fresh parsley, finely chopped, for garnish; marinara sauce for dipping

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.

Prepare Zucchini: Rinse the zucchinis under cold water, then dry them thoroughly with a kitchen towel. Slice them into rounds that are approximately 1/4-inch thick. Pat each round dry using a paper towel to minimize moisture, which helps achieve a crispier texture.

Set Up the Breading Station: In a shallow bowl, beat the two eggs until well combined. In another bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, salt, and black pepper to create a flavorful coating.

Bread the Zucchini Slices: Take each zucchini slice and dip it into the beaten eggs, letting any excess egg drip back into the bowl. Next, coat the slice with the Parmesan-breadcrumb mixture, pressing gently to ensure an even layer adheres to the zucchini. Arrange the coated slices on your prepared baking sheet in a single layer, leaving space between each piece for even cooking.

Bake the Crisps: Lightly spray or drizzle the breaded zucchini slices with cooking spray or olive oil, which will enhance their crispiness. Bake in the preheated oven for about 20-25 minutes or until they are golden brown and crispy. Flip the slices halfway through baking to ensure they cook evenly on both sides.

Garnish and Serve: Once baked to perfection, remove the zucchini bites from the oven and allow them to cool for a few minutes. For a fresh touch, sprinkle them with finely chopped parsley, if desired. Serve warm, accompanied by marinara sauce for a delightful dipping experience.
